Am folosit pentru carne:

6 pulpe de pui fara os

1/2 lingurita anason macinat

1/2 lingurita chimen macinat

1/2 lingurita cuisoare macinate

1/4 lingurita scortisoara macinata

1 lingurita boabe coriandru

sos soia

1/2 lingurita boia

3 linguri iaurt

Pentru orez:

1 cana orez basmati

fructe uscate (smochine,caise,curmale)

3 batoane scortisoara

3 stelute anason

6 cuisoare

1 morcov taiat bastonase

2 cm ghimbir

coaja de la o lamaie taiata bastonase

1 L apa

1 ceapa taiata solzisori

chimen macinat

turmenic

Pulpele de pui le-am spalat bine,apoi le-am taiat in bucati,le-am pus intr-un castron,condimentele le-am amestecat bine,boabele de coriandru le-am maruntit putin in mojar,apoi toate condimentele amestecate bine le-am pus peste carne,impreuna cu sosul de soia si iaurtul si am lasat sa stea asa cam 2 ore.Dupa acest timp,am pus putin ulei de rapita intr-o tigaie si am inceput sa prajesc puiul cu tot cu marinata cu iaurt,cam 2-3 minute pe fiecare parte.Le-am scos apoi pe un servet de hartie sa se absoarba grasimea.

Pentru orez a fost un proces mai lung insa…merita tot efortul.Am pus o oala cu apa la foc,am pus in ea betele de scortisoara,stelutele de anason si cuisoarele si le-am lasat sa fiarba cam 30 min.Intre timp eu am cojit o lamaie,i-am taiat coaja bastonase,am taiat ghimbirul si morcovul la fel si dupa 30 min le-am adaugat si pe ele in apa cu condimente si le-am mai lasat sa fiarba 20 min.In alta oala am pus apa la foc,cand apa a dat in clocot am turnat-o peste orezul asezat intr-un castron si am lasat asa 10 min,apoi am scurs apa si am turnat peste orez apa rece si am mai lasat sa stea 2 minute,apoi am scurs apa si am pus orezul intr-o cratita.

Am taiat ceapa solzisori,am pus-o la calit intr-o tigaie cu putin ulei de rapita,am adaugat chimen macinat si turmenic si am lasat cateva minute ceapa la foc mic,am adaugat apoi peste ea fructele uscate taiate cubulete,si am adaugat 2 polonice de “supa” cu anason si scortisoara,pana cand fructele uscate s-au inmuiat putin si am lasat pe foc pana apa s-a absorbit (dureaza 20 secunde).

Am incins bine cuptorul,peste orezul din cratita am adaugat ceapa cu fructele uscate si “supa” de anason si scortisoara cat sa acopere bine orezul,apoi am dat cratita la cuptor 15-20 min pana apa s-a absorbit complet.

La final,am servit orezul aromat cu fructe uscate alaturi de bucatile de pui in iaurt…o nebunie de arome.
