Time it takes to prepare the ingredients is about 20 minutes.Cooking time about 20 minutes.Enough for 4 people.


What you will need:

3 dried Chinese mushrooms,soaked in hot water for about 20 minutes
1 cake fresh bean curd(tofu)
Diced 4oz shrimp,shelled and de-veined(roughly 115g)
2 and a half cups of fish stock
2oz(56g) white fish fillet
1 tablespoon oyster sauce
1 tablespoon light soy sauce
1 tablespoon lemon juice
Half a tablespoon of lemon rind,cut into slivers
1 tablespoon vegetable oil
1 red chili pepper,seeds removed,and finely sliced
1 green chili pepper,seeds removed,and finely sliced
2 greeen onions,sliced
Salt
Pepper
1 tablespoon sesame oil

Garnish:
Fresh coriander,if desired

How to:

Soak the mushrooms in hot water and set aside.Heat the vegetable oil,and add shrimp,chili peppers,lemon rind and green onions.Add stock,oyster sauce and the light soy sauce and then bring to boil.
Reduce heat and simmer for 5 minutes.Season to your taste.
Remove hard stalks from mushrooms and slice the caps finely.Dice the white fish fillets and add them with bean curd and Chinese mushrooms to the soup,cooking for a further 5 minutes.Stir in lemon juice and sesame oil.Adjust seasoning,and serve sprinkled with fresh coriander leaves if you so desire.
